And another fantastic Friday rolls around. This week I’ll actually get some Swans footy!

With my darling boys having a bye last week it was all a bit colourless in the Hein house, although the neighbours were probably grateful. No mad yelling at the telly to put up with. There was the Open golf, of course, but that’s not really a sport to get yelly on the couch about, is it?

Which brings me to some Us Heins Weren’t Meant To Play Golf news. Despite not playing to the handicap I already have, I somehow managed to shave another stroke off it over the weekend. ‘Tis this newfangled Slope/GA Handicap system. It can sneak up and bite you on the bum and not even offset the pain with a win!

Hunting Out Good Food

Thank you Cathryn for inviting me onto your Friday Feast today!

Well over in WA it’s been both cold and wet (I know I should be used to this kind of weather since I hail from England but uh, no.) So I thought today I’d share a yummy winter meal that my mum used to make when I was a child. She only made it on rare occasions, probably because it takes two and a half hours prep time (excuse me while I laugh hysterically at this point! And never fear, this version takes about 10 minutes prep time which is not only far more civilized but also about my limit!!)

We knew it as Chicken Hunter Style and to my shame it was only when I was an adult that I realised it was an Italian dish by the far more exotic name of Chicken Cacciatore 🙂

There are of course many variations of this dish, including adding various peppers. I don’t bother adding peppers to anything since my darling family will meticulously fish out every single one on their plates before they can take the first bite. On the other hand I do add celery because I love cooked celery even though said beloved family… don’t 🙂

Chicken Hunter Style Recipe

Chicken Hunter Style

One four pound chicken cut into pieces

Salt

2 tbsp extra virgin olive oil

1 thinly sliced medium onion

226g thickly sliced mushrooms

2 thinly sliced garlic cloves

1/3 cup red or white wine

1 810g can of plum tomatoes in their juice (or 21/2 to 3 cups of peeled and chopped firm ripe tomatoes with their juices. Guess which I do…)

1/2 teaspoon freshly ground black pepper

1 teaspoon dry thyme (or 2 teaspoons fresh, chopped)

1 teaspoon dry oregano (or 2 teaspoons fresh, chopped)

Method

Rinse, pat dry and season chicken with salt. Heat oil on medium heat and brown the chicken pieces. Set chicken aside.

Add sliced onions and mushrooms to the pan (and any peppers or celery 🙂 ) Cook until onions are translucent then add the garlic and cook for another minute.

Add the wine and give it a good stir. Simmer until the wine is reduced by half and then add the tomatoes and stir in the pepper, thyme, oregano and a teaspoon of salt. Simmer uncovered for 5 minutes. Place chicken pieces on top, skin side up, lower the heat and cover with the lid slightly ajar.

Cook on a low simmer, turning and basting from time to time, until chicken is tender (about 30 to 40 minutes).

 

Ah, now there’s a lovely fast recipe to keep the hordes happy this winter. Thanks, Christina. I can just imagine this with a load of crusty bread to mop up all the juices. Mmm.

FRIDAY FEAST with Christina Ashcroft

Well, Feasters, the Christmas season is well and truly on us. Melbourne’s halls are decked and the Myer Christmas window display in Bourke Street Mall is delighting small and big children alike with its tribute to Rob Scotton’s sheepy children’s book Russel’s Christmas Magic. So in the spirit of the season, let’s play with some angels. Some decidedly unsheepish ones!

Many of you may know Western Australian author Christina Ashcroft already from her alter ego Christina Phillip’s wonderful (and super hot) Roman Britain-set books Forbidden and Captive. These are fantastic stories, overflowing with passion and beautiful, lyrical writing. I am, as you can probably tell, a fan. She may have had a name change but I bet Christina’s writing and storytelling remains just as captivating in her new release, Archangel of Mercy.

Archangel of Decadent Delight

 

Thank you Cathryn for inviting me back to your delicious Friday Feast to help celebrate the release of ARCHANGEL OF MERCY!

I wanted to share something completely mouth watering and seeing as it’s summer here in Oz (even though my internal clock insists it should be cold, dark and windy outside at this time of year!) what could be better than something chilly and gorgeous straight from the freezer?

Back in the Dark Ages, before the kids came along and I had the time and inclination to experiment in the kitchen, I used to work my way through all sorts of amazing sounding recipes. Not that they always turned out so well once I got my oven gloves on them (I will NEVER forget the duck a l’Orange I once tried to create in an effort to impress my new husband. The grease! You could have paddled in the stuff. I’ve never been able to try duck since!)

But I did find one yummy dessert that not only sounded great but also tasted divine. I was so excited at my Masterchef marvellousness that I made this dessert umpteen times (right up until the kids came along and we then proceeded to exist on a diet of fish fingers J )

It’s totally easy-peasy to make and in honour of my Archangel Gabriel just for today I’m going to call it…

 

Archangel of Decadent Delight

 

Ingredients (Makes anything from 2 to 4 servings, depending on how large your sundae glasses are!)

425g can of well drained pineapple pieces

4 tablespoons of rum or orange juice

300ml soft scoop vanilla ice cream

To Serve

150ml whipping cream

2 tablespoons desiccated coconut

4 maraschino cherries, drained

15g chocolate sprinkles

First of all you need to chop up half the pineapple. A good idea would be to buy a tin of already crushed pineapple (I’m going to do this next time!) Pop this in a bowl and sprinkle with half the rum or OJ.

Pour the rest of the rum over the remaining pineapple pieces, cover both bowls with cling film and then pop them in the fridge for an hour or so.

Once they are nicely chilled, drain the juice from the chopped pineapple and reserve the juice. Then quickly mix this mashed up pineapple into the ice cream with a fork. It’s good exercise!

Divide the mixture between your sundae glasses. They need at least 4-5 hours in the freezer or better still overnight.

To serve – whip the cream until soft and standing in peaks. Whisk in the coconut and the juice from the chopped pineapple. Take glasses from freezer. Add the rest of the pineapple pieces on top of the ice cream, including any juice. Then top each with coconut cream, a maraschino cherry and a little, or lot, of chocolate sprinkles. Serve at once and enjoy!

I usually use the rum, but tried it out with orange juice and it still tastes completely delicious. If, like me, you suffer a domestic disaster with the whipping cream then I can confirm that cheating and using Dream Whip totally works!

Oh, I do love Fridays. Not only is it the end of the week, which means fun, frivolity and very, very soon FOOTBALL, it’s Friday Feast time. And I don’t know about you, but I’m thoroughly enjoying these posts. Everyone has such wonderful food stories to share and today’s guest is no exception.

I am a huge admirer of Christina Phillips. Her writing is beautifully lyrical, her stories compelling and her heroes… well, let’s just say they make me gooey. A lot gooey, in fact. Maximus, Maximus, you sexy Roman hunk of….

Thank you Cathryn for having me on your blog today! I love the idea of your Friday Feast blog posts and all the delicious recipes. I’m sure I’ve whacked on several kilos just by drooling over the photos!

Since I’m a bit of an undomestic goddess I thought I’d chat today about a recent wine tour we enjoyed in the gorgeous Margaret River region of Western Australia. It was to celebrate my husband’s birthday and my daughters discovered a fantastic villa right on the river – Riverzedge Retreat.

Two weeks before the weekend we sat him down and told him we were going away and he needed to take time off work (yes he does need to be told this!) The weekend arrived and the weather was perfect. The villa was stunning and our bedroom was fabulous. I’ve always had a craving to sleep in a four poster bed and although it didn’t quite have the four posts it did have the most gorgeous drapes, and combined with the breathtaking views it was a little slice of heaven!

On the Saturday morning the seven of us trudged down the hill to wait for the tour bus. Aha! As an added surprise we’d told him we were taking the tour bus and I will never forget the look of absolute astonishment on his face when instead of a bus, an amazing white limo pulled up!

I would now love to give a detailed description of every winery we visited and wines consumed. Unfortunately, I enjoyed myself far too much at the first stop with a selection of Chardonnays and Cabernet Sauvignon Merlots and the entire day is one very happy blur!!!

However, I do remember we stopped for lunch at the Voyager Estate with its magnificent Cape Dutch architecture. The grounds are absolutely beautiful and after we’d eaten (I believe more wine was also consumed!) we had a leisurely wander around the lovely rose gardens.

One of the experiences I’ll never forget is the adorable kookaburra that woke us each morning by dive bombing our windows. I’m originally from the UK and a total City girl, and even after living in WA for thirteen years the incredible wildlife still leaves me breathless. It was kind of surreal to hear this kookaburra doing his best to wake us up, then we’d walk out onto the balcony and there he’d be, perched on the rail and giving us the beady eye. It’s the closest I’d ever got to this cheeky bird and I discovered they are a lot bigger than I’d imagined when, as a child, I’d warble “Kookaburra sits in the old gum tree…” We also had a family of ducks who’d waddle right up to the back door looking for edible goodies.

It was a wonderful weekend away with great company, plenty of wine and delicious food (none of which I had to cook and in my book that is a huge bonus!!)

As a side note, when I was researching for my Roman/Druid romances I came across several fascinating tidbits. Apparently the Romans thought it was common to drink wine neat and instead they’d cut it half with water. But what really knocked me sideways was how during the earlier Republic period it was against the law for Roman women to drink wine at all. The reasoning behind this was because, naturally, women were unable to control themselves and if they drank wine they would sleep around. A man was within his rights to kill his wife if he discovered she’d been drinking and in order to discover if she had he would kiss her on the lips! So much for romance 🙂 Needless to say none of my heroes harbour such barbaric prejudices!

Sigh. That sounds so wonderful. Thanks, Christina. Fabulous post. Margaret River is one of the few Australian wine regions I’ve yet to visit and this just makes me want to go there more. Although I’ll definitely have to drag along the golf clubs so I can wear off all that delicious food and drink with some exercise.
